I’m always looking for ways to change up breakfast, especially on busy mornings. It’s usually a blueberry toaster waffle topped with nut butter as I run out the door to work; or the occasional overnight oats if I remember the night before. But THESE! These baked oatmeal squares with berries are a game changer! They are loaded with all the goods – chia seeds, berries, and just the right amount of sweetness.
About an hour (mostly because it takes awhile to bake) and you have a filling breakfast for your week! Throw some nut butter on top and you’re good to go, and warm it up in the microwave for about 30 seconds if you want to get real fancy.
Berry Baked Oatmeal
Ingredients
- 2 cups Oatmeal
- 1 tsp Baking powder
- 1 tsp Cinnamon
- 1/2 tsp salt
- 2 Large Eggs
- 2 cups Milk of choice
- 2 tsp vanilla
- 1/3 cup Honey or Maple Syrup
- 2 tbsp Chia seeds
- 1 cup Fresh or Frozen Berries
Optional Toppings
- 1/2 cup chopped nuts
Instructions

Preheat oven to 375 degrees F

Mix together oats, baking powder, salt, cinnamon together.

Add in milk, egg, honey, vanilla, and mix well

Add in chia seeds and berries and mix until just combined

Add to 9x9 baking pan lined with parchment paper, or well oiled

Top with optional nuts before baking

Bake for 45-50 minutes. Allow to cool for 5 minutes and enjoy. Or save in the fridge for up to 5 days.
