Did I mention we only took my little Honda Civic up to Tahoe. Yeah, it was filled to the brim with all the essentials. So it was pretty imperative that we didn’t pack more than we needed to. About a week before we left, I made lists, and then more lists, and then final draft lists before I made the final final draft lists. Yes, plural. I had multiple lists. I may or may not have a problem, but hey we didn’t forget anything, and didn’t over pack. One of those lists was designated for our menu, and then another was the grocery list for said menu. It was pretty easy for me to throw together since I make menus and shopping lists for my day-to-day meals. Since, I found it a little difficult to find inspiration for camping meals, I thought I would share what worked for us.
We got up before the sun to start our road trip up to Tahoe, so we stopped along the way for lunch, but once we got in and set up we were prepared for dinner.
Monday
Dinner: Chicken sausage dogs topped with onion and avocado, macaroni salad, and fruit
*The macaroni salad was prepped ahead of time, and the fruit was washed and prepared ahead of time as well.
Tuesday
Breakfast: Pancakes, sausage, and fruit
Lunch: Bean and Cheese Burrito, and veggies
*Refried beans were made ahead of time, and the carrots and celery were washed and cut ahead of time
Dinner: Chili, veggies
*The chili is a favorite we had last year camping: 4 different cans of beans + a can of fire roasted tomatoes. We topped it with avocado, onion and crushed jalapeno potato chips, and served with tortillas warmed on the grill.
Wednesday
Breakfast: Breakfast Burritos
*Scrambled eggs, chicken sausage, shredded potatoes, cheese, avocado wrapped up in a tortilla.
Lunch: Peanut Butter + Jelly sandwiches, and fruit
*Today we went on our kayaking adventures so we packed PB + J sandwiches and ate lunch on the lake.
Dinner: Chili Dogs, macaroni salad, and veggies
*We used left over chili to top our chicken dogs. Thursday
Breakfast: French Toast, and fruit
Lunch: Peanut Butter + Jelly sandwiches, and veggies
*Again, because we went hiking and weren’t at our campsite, we packed lunch.
Dinner: Free Night at Burger me in Truckee. Friday
Breakfast: Breakfast on our way out of town at the original Red Hut Cafe
Our campsite was on the West side of the lake, and there wasn’t really anything between there and South Lake Tahoe. When we got into South Lake, we searched for best breakfast, and The Red Hut Cafe came up. Honestly, for the rave reviews, it didn’t knock us out of the park. It hit the spot for some breakfast and filled us up for our road trip home. And of course it wouldn’t be camping without campfire desserts, we had plenty of those. We roasted marshmallows, experimented with different s’mores (hello PB +J), topped our hot chocolate with roasted mini marshmallows, and tried our hand at campfire cones (review coming tomorrow). So there you have it, our camping menu. We tried to be conservative and make use of everything we took, and I’m proud to say that we didn’t have too much left over going home!
