We go to Costco every few months to stock up on ou

We go to Costco every few months to stock up on our tired and true favorites (the last item is a necessity!) and always pick up a few new items to try out. I always love to see these types of videos because I know @costco carry different items depending on the geographical locations.

Here’s some of our favorites / what caught my eye:
- love to see @drinkpoppi in bulk!
- Avocado / Guac / hummus cups are an easy grab and go option for lunches and snack time
- We always pick up @kevins.natural.foods at Costco for easy weeknight meals
- Excited to try @amylufoods breakfast chicken sausage (thinking of adding it to an egg bake!)
- @yourtaylorfarms salad + some protein for quick meal prepped lunches! Or wrap in a tortilla for a sandwich wrap.
- We go through plain Greek yogurt like crazy, and you can’t beat the Costco price!
- I always grab a big bag of frozen mixed fruit to have on hand
- Love @puravida.foods vegetable mix
- @justbarechicken obviously.
- if I had a fridge dedicated to drinks, these @brewdr would be the first thing in there.
- We love @sietefoods tortillas, always happy to see them at @costco_doesitagain
- Starbucks egg bites are a guilty pleasure, so happy to see them at our Costco (and cheaper than buying them in store!)
- @perfectbar will forever and always be my go to protein bar choice
- trying @mush for the first time! This whole pack was under $10!
- Dried fruit (with no added sugar) and nuts are a Costco no brainer, can’t beat the bulk price
- @kodiakcakes mix is a staple in our house
- can’t go wrong with the price of almond butter or a two pack of @chosenfoods avocado oil at Costco
- I wish our Costco stocked other beans, but i always grab a thing of black beans to have on hand
- @seedsofchange grain pouches come in handy in a pinch for an easy whole grain side to add to meals (love adding it in an enchilada skillet)
- @simplemills crackers are some of my favorites
- @thatsit bars are an easy, healthy snack option!

- the best brownie mix, hands down.

Things I meal prepped to make our week go a little

Things I meal prepped to make our week go a little bit smoother -
For me, having a few things prepped ahead of time and a plan for dinners helps with those busy week days.

Here’s what I was able to prep:
- Apple + pear purée for my 8 month old made in the @beaba_usa
- Banana hemp muffins (recipe from @compstonkitchen)
- Apple chai overnight oats
- Southwest quinoa salad with green goddess dressing for lunches
- Also washed off berries for the week

We’re at @traderjoes so often Miss Peach is starting to recognize the workers 😂💁🏼‍♀️

Here’s what we got goin for dinners this week:
- Sheet pan chimichurri chicken sausage + fajitas served with rice and avocado
- Fiocchetti pasta (in the frozen section) with chicken sausage and steamed broccoli (I love to have these items on hand for when I need a quick meal in 15 minutes and don’t feel like cooking)
- Egg roll in the bowl (recipe from @lindsaysurowitz) and sautéed bok choy with added chili onion crunch
- Lemon and Parmesan crusted chicken with roasted carrots, side salad, and garlic bread
- Southwest salad with roasted corn, black beans, tomatoes, red onion, quinoa tossed in a green goddess dressing (will make this ahead of time for lunches!)

SAUSAGE + SPINACH EGG BAKE with a crispy hash brow

SAUSAGE + SPINACH EGG BAKE with a crispy hash brown crust.

hash browns (I used 5 patties from Trader Joe’s)
2-3 sausage links, cooked + chopped or crumbled
1/2c spinach, chopped
1-2 Tbsp sun dried tomatoes, drained of any oil
Feta (measure with your heart)
6 eggs
1/4 c milk
1/4 tsp Dried oregano
Pinch of S + P

Let’s make it:
- Preheat oven 350°
- Line bottom of your baking dish with hash browns and bake for 10-12 minutes
- Meanwhile, cook off sausage. Whisk together eggs, milk and seasonings
- Once hash browns are done, layer cooked sausage, spinach, sun dried tomatoes, and feta cheese over top.
- Pour egg and milk mixture over everything
- Cover with foil and bake for about 20 minutes
- Remove foil and bake for an additional 10 minutes

Turns out working full time and raising a tiny hum

Turns out working full time and raising a tiny human leaves you with very little free time. I spent one of my days off, during my baby’s nap time, and prepped this for the week ahead. A little over an hour and we’re set for the week!

- Egg bake for breakfast (recipe coming soon!)
- Mediterranean inspired chopped salad for lunch (recipe from @jenneatsgoood)
- Instapot hard boiled eggs for snacking or as part of a meal for my 8 month old
- Spinach and White bean purée for my 8 month old

- Not shown: cleaned and washed our berries for the week, and washed and chopped up veggies for snacking. If I don’t do this I know we won’t eat them!

I’m still trying to find a balance between working, and making sure my family has nutritious meals (and let’s be real, not get burnt out in the process) - especially since our little Peach is starting solids!

By prepping a few things ahead of time, it greatly reduces the day to day stress on my end over worrying about what’s for breakfast, lunch and dinner. And leaves me with more free time to spend with my little fam 🫶🏼💕

- @whatsgabycookin Chuck roast tacos with guac and pickled red onions and a bean and roasted corn side
- Sun dried tomato meatballs with creamy @eatbanza spinach and sun dried tomato rice
- Roasted lemon chicken and vegetables with a creamy pesto sauce
