Hi friends and Happy Hump Day! We are half way to the weekend. How many of you have a three day weekend? We are so excited over here and have already made plans to spend our extra day hiking! There is that little holiday situated on Saturday too-Valentine’s day, or singles awareness day, whatever you are celebrating.
I also think these delicious muffins should be on your agenda for the weekend! Such an easy, almost fool proof recipe to whip up in no time. I have made these muffins at least 5 times now, only forgetting the applesauce once (they still came out good!). They are packed with healthy nutrients, easy to whip up, and are a crowd pleaser for your pickiest eater!

We make a few regular size muffins, and then we make some smaller muffins to crumble over oatmeal, or to snack on mid afternoon. The larger/regular size muffins are great as a breakfast on the go type thing. You could always pop them in the microwave for 10 seconds to warm them up too! YUMMY!
Double Berry Chia Muffins
Adapted from Domesticate Me
- 1 egg
- 1/2 c sugar
- 3/4 c non-fat Greek yogurt
- 1/4 c unsweetened applesauce
- 2 T honey
- 1/2 t vanilla
- 1/8 t cinnamon
- 3/4 t lemon zest
- 1 c all purpose flour
- 1/2 c whole wheat flour
- 1 1/2 t baking powder
- 1/4 t baking soda
- 1/4 t salt
- 1 1/3 c berries (I used blueberries and raspberries)
- 2 T chia seeds
- Pre heat your oven to 375 degrees Fahrenheit and prep a muffin tin by spraying it with cooking oil.
- Wash and dry your berries. It’s important you remove any excess moisture from you berries the best you can, the added moisture can make the batter thin and mess up your final product. When your berries are dry, toss them in a tablespoon of flour to coat. This helps them stay suspended in the batter better.
- In a large mixing bowl combine your dry ingredients (Flours, baking powder and soda, and salt) and set aside.
- In a smaller bowl whisk together your egg and sugar until well combined.
- Add in the yogurt, applesauce, honey, vanilla, cinnamon and lemon zest to your egg and sugar and mix until well combined
- Add the WET ingredients to the DRY ingredients by gently mixing; be careful not to overmix (can cause dense muffins!!)
- Fold in the berries and chia seeds.
- Scoop out about 1 tablespoon of batter into a mini muffin tin, obviously more for larger muffin tins.
- Bake for 15-17 minutes, or until a toothpick inserted comes out clean.
These would make awesome Valentine’s day gifts. Pop them in a clear plastic cup wrapped in cellophane and tied with twine. Use our Food Pun Valentine’s to top them off!
