As a nutrition student, soclosetobeingadietitian, I am constantly being asked what I am eating. I guess it’s the equivalent of wanting to see what’s inside a make up artists make up bag, or how white a dentists teeth are. No? Maybe that’s just me.65 I sometimes share a glimpse of my food on my personal instagram. If you follow me on Instagram, you may be familiar with my reoccurring hashtag #onlisysplate. Lisy is my childhood nickname given to me, and still in use by, my family. I don’t always share my food on there because 1. I know it can get annoying to non-foodies that I am constantly sharing food pictures 2. I once obsessed over taking a picture of every single thing that I ate, but I’m trying to just be in the moment more. I come across a lot of really good recipes and visit some unique restaurants with dishes that need to be shared, so I decided to start this little column to share what I am eating whether it be at home, or out and about, if I decided it’s worth reporting back for!
1. Cream Cheese pesto bruschetta with roasted grape tomato // DELICIOUS: We went to Brio Tuscan Grill for brunch on our anniversary and had a really delicious meal complete with a good bruschetta for an appetizer. Within the next couple of nights I decided to recreate the bruschetta at home, and they came out fantastic! Warm baguette topped with whipped cream cheese, pesto, roasted cherry tomato and a sprinkle of Parmesan.
2. Turkey Sausage over penne and broccoli // DELICIOUS: I’ve been on the look out for a good, healthy, recipe for turkey sausage. I came across this one, and while it wasn’t made for turkey sausage-the substitution of turkey sausage for chicken sausage was phenomenal! We actually froze the meatball concoction for a couple days, then popped it in the fridge to thaw out for a day before we made them. We kept to the recipe pretty religiously and I can say this will be in constant rotation.
3. Peanut Butter and Pancakes // DELICIOUS: because duh. It’s a brunch at home staple. We like to top ours with bananas and walnuts and sometimes blueberries.
4. Mixed Salad // GOOD: I usually figure out our meal plan for the week, make a grocery list and then go shopping on Sunday’s before the craziness of the week starts. Sunday was hectic so I grabbed a rotisserie chicken at the market and shredded it up to use throughout the week. Two words= TIME SAVER. I topped a spinach salad with veggies, whole wheat pasta and some chicken for my lunches for the week.
5. English muffin breakfast // DELICIOUS: This was a lazy Saturday morning breakfast. Toasted English muffin topped with one egg and one egg white scrambled, avocado and salsa. Add avocado to almost anything and I am a happy girl.
6. Asiago Farro bean dinner // GOOD: Some of my favorite recipes come from a pinch of yum. I knew when I saw this recipe, it would be no exception. Best part? There are only 5 ingredients and you only need ONE pot. I bought some 10 minute farro from Trader Joes and cooked it in a pot, drained it and then added the rest of the ingredients. Doesn’t get much easier than that! We had this along with left over turkey meatballs for a quick week night dinner, and enough for Trav to take leftovers to school the next day.
7. Chia yogurt snack // GOOD: I love yogurt and almost always have at least a big tub of plain Greek yogurt and some smaller snack size yogurts stocked in my fridge. I’ve recently feel in love with Siggi’s brand yogurts. I mixed a snack size cup with about a tablespoon of chia seets and topped it with vanilla granola, strawberries and a scoop of Peanut Butter.
8. Mediterranean Lentil Salad // DELICIOUS: I am obsessed with this salad. This is the second week (in a row!) that I have made it for lunches. Some tweaks I made to the recipe include using regular black olives, Mediterranean style feta and adding in roasted red pepper. I paired it with Trader Joe’s pita crackers for a filling office, mid day lunch!

PS: I am so overwhelmed with joy from the success of our Food Pun Valentines! I have been seeing pictures all day long of all the creative ways people are choosing to hand them out! You guys make my heart burst (in a good way).
