As a nutrition student, soclosetobeingadietitian, I am constantly being asked what I am eating. I guess it’s the equivalent of wanting to see what’s inside a make up artists make up bag, or how white a dentists teeth are. No? Maybe that’s just me. I sometimes share a glimpse of my food on my personal instagram tagged with #onlisysplate. I come across a lot of really good recipes and visit some unique restaurants with dishes that need to be shared, so I decided to start this little column to share what I am eating whether it be at home, or out and about, if I decided it’s worth reporting back for!
1. Valentine’s day brunch: On our way out to Malibu to hike, we stopped off at Lincoln in Pasadena. There was quite a wait, and we had to pounce on an available table after waiting for one, but the food made it worth it. I got the roasted tomato and goat cheese quiche and trav got the Huevos Rancheros. DELICIOUS!
2. Animal Crackers and Almond Butter Snack: because why not? And note to self: make some home made almond butter-I hear it’s ridiculously easy.
3. Overnight Oats: I have been making overnight oats for about a year now and it’s my most requested recipe. I finally took pictures and will have an official recipe up for you in the next week or so! We usually top ours with granola, fresh fruit and a scoop of nut butter!
4. Chicken Pitas: Warmed whole wheat pitas stuffed with homemade tzatziki sauce, spinach, Mediterranean grilled chicken and oven roasted red bell peppers. This is one of our favorites and is great for lunch the next day!
5. Peanut Butter Banana French Toast: So my mom got us hooked on Brunch at Bobby’s, and now we are basically obsessed with Bobby Flay’s recipes. This peanut butter banana stuffed french toast is one of his recipes and it did not disappoint. Really quick to whip up, and we had all the ingredients on hand already. We made both with whole wheat bread and made one with almond butter and actually preferred it over the peanut butter one.
6. Veggie Egg Scramble: It was one of those nights I had a million and one things to do and I didn’t feel like my go to Chipotle. I sauteed red bell pepper, yellow onion, broccoli, and mushrooms with some scrambled eggs. I topped it off with 1/4 of an avocado, cheese, and some spicy chicken sausage.
7. Roasted Vegetable Enchilada casserole: The highlight of last week was hands down this enchilada casserole. Recipe coming soon. We topped ours with left over green salsa and cojita cheese my aunt picked up at a Mexican market, avocado and 0% fat Greek yogurt (we almost always sub out sour cream for this!!).
8. Oatmeal: This time topped with strawberries, almond butter, and left over home made raspberry compote we topped pancakes with on Valentines day.
