These snickerdoodle bites instantly transport me back to summers at my grandparents house when I was a kid. My grandma makes THE BEST snickerdoodle cookies. And you know, no matter how close you follow the recipe, it’s just never the same. Alas, I came up with comparable no-bake snickerdoodle bites that are healthier, easier to throw together and are perfect to curb that sweet-tooth craving.
While they will never compare to my grandma’s fresh out of the oven snickerdoodle cookies, these are a close second – I mean, look at that texture! And yes, you 100% should make a double batch. Pro tip: use a cookie scoop to make these that much easier to throw together! This is the one I use, and it’s one of the most used items in my kitchen!
Snickerdoodle bliss balls
Ingredients
- 3/4 cup cashew butter
- 1/2 cup almond flour
- 2-3 Tbsp honey or agave syrup to taste
- drizzle of vanilla
- 1-2 Tbsp cinnamon + sugar mixture
Instructions

Combine all of your ingredients except cinnamon and sugar. I mixed everything by hand, but if you have a food processor, that would work great too

If your mixture seems too runny (from the nut butter), add more almond flour to it.
If your mixture seems to dry, add some more honey

Roll into balls. A cookie scoop works wonders here! And pop in the fridge for 10-15 minutes

Once set, roll into cinnamon and sugar and enjoy
