Artichokes. I am officially obsessed and nothing I make is safe from them lately! There is a cute little sandwich shop at SDSU called olive oil cafe that serves a greek veggie sandwich topped with artichokes. This is where my artichoke obsession can be traced back too. If you are ever on SDSU’s campus I highly suggest Olive oil cafe; pretty much anything from there is delicious. Ok so my point is that my artichoke obsession lead me to create this very delicious veggie packed sandwich.
Coming in at 340 calories this sandwich is vegetarian friendly + packed with many essential vitamins and minerals needed for good health. In addition, there is 11grams of fiber which is about half of your daily requirement (14g of fiber for every 1000 calories consumed) and should keep you full for a while!
This sandwich is pretty versatile in that you can use whatever veggies you have on hand. You can substitute spinach or romaine lettuce for the arugula and you can omit the cheese if you are lactose intolerant, or just want to save about 80 calories. Avocado and some bell peppers would be great additions or substitutions as well!
Veggie Sandwich
Prep Time 10 minutes
Ingredients
Ingredients:
- 2 slices of whole wheat bread
- 1 slice Mozzarella
- 1/4 c Marinated Artichokes
- 1/4 Cucumber, sliced
- 1 Small Tomato, sliced
- 1 slice Red Onion
- 1/3 c Arugula
- 1/4 c Shredded Broccoli + Carrots
- 1 T Cilantro and Jalapeno Hummus
- Thyme
Instructions

Place your slices of bread on a baking sheet. Layer one piece with mozzarella cheese + Artichokes. Drizzle other slice with juice from artichoke jar or olive oil. Sprinkle both sides with dried Thyme and place in broiled for 2-3 minutes.

Remove from oven and let cool. Spread hummus on slice opposite moz + artichokes. Layer slices of bread with cucumber, tomato, red onion, broccoli + carrots and lastly arugula.
