Ok so we all have some kind of routine when it comes to grocery shopping right? I don’t like to say I “meal prep” but I do plan out our meals for the week and then go shopping based off of that list. For the past couple of months I’ve been sharing my grocery hauls (80% from Trader Joes and about 20% from Sprouts) on Instagram and people seem to find it very helpful. One of the main requests I get is to share the recipes for the meals I share. So I’m going to share my weekly meals with links to recipes and more in depth review of each meal here, in addition to continue sharing on the gram.
1 – Mediterranean Chicken Burger Bowls | I’ll do a recipe post on these burgers soon because they are SO good and you guys need to make these STAT. I usually serve these over a bed of greens, quinoa, homemade tzatziki sauce using THIS recipe, homemade pita using THIS recipe (so easy and so much better than store bought!), hummus, and either roasted red bell peppers or a cucumber, tomato, red bell pepper salad tossed in EVOO and fresh parsley.
2 – Sofritas Taco Bowls | I’m going to use THIS recipe for the sofritas, and then serve it over cauliflower cilantro lime rice, THIS corn, and avocado
3 – Mac n Cheese with Kale Caesar Salad | THIS is the recipe I’m going to use, but add gruyere, cheddar, and jack cheese and 1.5 diced jalapeños. We had this out of the world kale caesar salad in Portland (from GRASSA) that I’m going to try to recreate to go along side the Mac n cheese because #balance, right? I’ll report back if it’s worth sharing.
4 – Black Bean and Quinoa Burger lettuce wraps | I try to do 1 or 2 “easy” meals (for me that means minimal prep and can be done in 30 minutes or less). This week it’s burger lettuce wraps. These come together pretty quickly with these burgers, and then I’ll top them with this cowboy caviar from Trader Joes and cheese. We usually use romaine lettuce, but I picked up some butter lettuce this time to switch it up. For the sides I’ll make our favorite sweet potato fries and roast whatever veggies we have left over (on the same pan).
Before I get questions, I’m only sharing dinners because breakfast and lunch are less than exciting for us. I am lucky enough to get breakfast and lunch for free at work. Some mornings I will take overnight oats, or yogurt with granola and peanut butter for breakfast. Travis usually eats cereal or toaster waffles for breakfast. For Trav’s lunches, he will usually have left overs, or PB+J sandwich with fresh fruit/vegetables I keep cut up in the fridge. So that’s why I only share our dinners.
