Ok so we all have some kind of routine when it comes to grocery shopping right? I don’t like to say I “meal prep” because I more or less plan our meals for the week and then go shopping based off of that list. For the past couple of months I’ve been sharing my grocery hauls (80% from Trader Joes and about 20% from Sprouts) on Instagram and people seem to find it very helpful. One of the main requests I get is to share the recipes for the meals I share. So I’m going to share my weekly meals with links to recipes and more in depth review of each meal here, in addition to continue sharing on the gram.
1 – Stuffed Bell Peppers | My favorite stuffed bell pepper recipe is THIS one. I’m going to sauté spinach along with the onion and garlic in place of the cilantro.
2 – Baked Potatoes | I always have left over turkey mixture from the stuffed bell peppers, so I’m going to use that to top baked potatoes with for an easy dinner. I’m also going to top the potatoes with non fat greek yogurt (in place of sour cream), avocado, cheese, and steamed broccoli.
3 – Ravioli with Chicken sausage and side salad | One of our easy meals this week is going to be THIS goat cheese ravioli (I find it at Target)! And serve it with chicken sausage and a side salad.
4 – Bean + Corn Flautas | This recipe comes from one of my favorite cookbooks, Thug Kitchen. I also roast sweet potatoes and add that into the mixture. I’ll serve these with greek yogurt, mashed avocado and cheese.
5- Spinach Pesto Pasta | Ok, for those that have been following along on Instagram, I’m pretty sure I make this every other week. But, we are just absolutely OBSESSED! I make a super simple spinach pesto (I’ll post the recipe soon!) and serve over whole wheat pasta from Trader Joes with sautéed vegetables (usually mushrooms, onion, bell pepper) and jalapeño chicken sausage (from Trader Joes!).
Before I get questions, I’m only sharing dinners because breakfast and lunch are less than exciting for us. I am lucky enough to get breakfast and lunch for free at work. Some mornings I will take overnight oats, or yogurt with granola and peanut butter for breakfast. Travis usually eats cereal or toaster waffles for breakfast. For Trav’s lunches, he will usually have left overs, or PB+J sandwich with fresh fruit/vegetables I keep cut up in the fridge. So that’s why I only share our dinners.
If you do have any other questions, leave them below. I’m going to do a post in the coming weeks on all the questions I’ve been getting in response to my weekly meal plans.
Make sure to follow along on Instagram where I walk through my weekly meal plan and show you my grocery haul on Instastories each Sunday!
