Ok so we all have some kind of routine when it comes to grocery shopping right? I don’t like to say I “meal prep” because I more or less plan our meals for the week and then go shopping based off of that list. For the past couple of months I’ve been sharing my grocery hauls (80% from Trader Joes and about 20% from Sprouts) on Instagram and people seem to find it very helpful. One of the main requests I get is to share the recipes for the meals I share. So I’m going to share my weekly meals with links to recipes and more in depth review of each meal here, in addition to continue sharing on the (insta) gram.
1 – Chicken Parm Meatballs | I’ve made these before and they are the best! I use Whats Gaby Cooking’s recipe and make no notifications because I’m obsessed just the way they are! I’m going to serve it over whole wheat pasta and either steamed broccoli or a side salad because #greens!
2 – Black Bean Sweet Potato Tacos | Taco Tuesday is going to be vegetarian this week! I serve these with this cabbage slaw tossed with my new favorite obsession (Green Goddess dressing), jack cheese, and avocado.
3 – Falafel Pita Pockets | I picked up Falafel mix (new item) at Trader Joes because I love falafel and making it by scratch is not week night friendly. I’ve seen mixed reviews about this mix, so we will see. Either way, I’m going to serve these with pita, greens, roasted red bell pepper, red onion, and tzatziki sauce I picked up at the store.
4 – Orange Chicken Bowls | Easy meal this week is Trader Joes frozen orange chicken served with brown rice, pot stickers (also found at Trader Joes), and steamed broccoli and carrots and all the Sriracha!
Before I get questions, I’m only sharing dinners because breakfast and lunch are less than exciting for us. I am lucky enough to get breakfast and lunch for free at work. Some mornings I will take overnight oats, or yogurt with granola and peanut butter for breakfast. Travis usually eats cereal or toaster waffles for breakfast. For Trav’s lunches, he will usually have left overs, or PB+J sandwich with fresh fruit/vegetables I keep cut up in the fridge. So that’s why I only share our dinners.
If you do have any other questions, leave them below. I’m going to do a post in the coming weeks on all the questions I’ve been getting in response to my weekly meal plans.
Make sure to follow along on Instagram where I walk through my weekly meal plan and show you my grocery haul on Instastories each Sunday!
