Ok so we all have some kind of routine when it comes to grocery shopping right? I don’t like to say I “meal prep” because I more or less plan our meals for the week and then go shopping based off of that list. For the past couple of months I’ve been sharing my grocery hauls (80% from Trader Joes and about 20% from Sprouts) on Instagram and people seem to find it very helpful. One of the main requests I get is to share the recipes for the meals I share. So I’m going to share my weekly meals with links to recipes, products used, and more in depth review of each meal here, in addition to continue sharing on the (insta) gram.
1 – Egg Cheese Avocado Sandwiches | Super simple toasted sandwiches with either whole wheat or sour dough toast, fried egg, cheese, avocado, and a home made sun dried tomato pesto. I’m going to attempt to recreate Mendicino Farm’s curried couscous with roasted cauliflower (from this recipe) to go along side this and throw some greens in there somewhere.
2 – Sweet Potato gnocchi skillet | Trader Joe’s frozen sweet potato gnocchi in sage sauce served with mushrooms, cherry tomatoes, chicken sausage, and greens for an easy week night dinner. Using this recipe I came across.
3 – Black Bean Nachos! | We have a nacho recipe on repeat, but when I came across this recipe by my favorite What’s Gaby Cooking, I knew we needed to add it to the weekly menu! I’ll serve these with avocado, and greek yogurt.
4 – Spinach Pesto Pasta| Are you sick of this being in our almost weekly rotation yet? ha! Whole wheat pasta mixed with sautéed vegetables (this week it’s going to be bell pepper, yellow onion, mushrooms, garlic), and all tossed with chicken sausage and homemade spinach pesto!
5 – Sun dried tomato quiche| To use up the eggs I’m going to buy for the sandwiches, I’m going to make a quiche one night. Our favorite includes goat cheese, sun dried tomatoes, and spinach! I usually serve this with side of greens. This is usually pretty easy to throw together, it’s just waiting for it to bake that takes awhile.
Before I get questions, I only sharing dinners because breakfast and lunch are less than exciting for us. I am lucky enough to get breakfast and lunch for free at work. Some mornings I will take overnight oats, or yogurt with granola and peanut butter for breakfast. Travis usually eats cereal or toaster waffles for breakfast. For Trav’s lunches, he will usually have left overs, or PB+J sandwich with fresh fruit/vegetables I keep cut up in the fridge. So that’s why I only share our dinners.
