Ok so we all have some kind of routine when it comes to grocery shopping right? I don’t like to say I “meal prep” because I more or less plan our meals for the week and then go shopping based off of that list. For the past couple of months I’ve been sharing my grocery hauls (80% from Trader Joes and about 20% from Sprouts) on Instagram and people seem to find it very helpful. One of the main requests I get is to share the recipes for the meals I share. So I’m going to share my weekly meals with links to recipes, products used, and more in depth review of each meal here, in addition to continue sharing on the (insta) gram.
It’s been a couple weeks since a weekly meal plan has been posted, but I’m back! We’ve been in Europe the past two weeks (I typed “months” at first because it really felt like that-ha!). We’re slowly getting back into routine here and trying to fit in as many vegetables as possible while doing so! So here’s what we are eating this week. I only did 4 meals because I am wanting Chipotle sometime this week! #withdrawls
1 – Stuffed Sweet Potato Skins | This is one of our favorite recipes out of the Half Baked Harvest cookbook! I add in a can of black beans and saute the turkey with yellow onion and garlic to give it some extra flavor. I top ours with greek yogurt, avocado and cilantro
2 – Ravioli with Kale Caesar Salad | I picked up a goat cheese and sun dried tomato ravioli from Trader Joes for an easy week night meal. I’ll top it with our favorite homemade spinach pesto, and serve it with chicken sausage and a kale caesar salad with home made croutons.
3 – Roasted Vegetables with Chicken Burgers | I picked up all kinds of vegetables at the farmers market this weekend (much needed after all the gelato and croissants in Europe!!). I’m going to make a big batch of roasted vegetables, using this recipe. Then I’ll make mediterranean chicken burgers (recipe on my instagram story highlights), and serve it all with hummus and pita bread
4 – Collard Green Spring Roll Wraps| Im going to use this recipe for these! I haven’t made it before, but she usually has pretty good recipes and you can’t go wrong with any of them.

Before I get questions, I only sharing dinners because breakfast and lunch are less than exciting for us. I am lucky enough to get breakfast and lunch for free at work. Some mornings I will take overnight oats, or yogurt with granola and peanut butter for breakfast. Travis usually eats cereal or toaster waffles for breakfast. For Trav’s lunches, he will usually have left overs, or PB+J sandwich with fresh fruit/vegetables I keep cut up in the fridge. So that’s why I only share our dinners.
