Ok so we all have some kind of routine when it comes to grocery shopping right? I don’t like to say I “meal prep” because I more or less plan our meals for the week and then go shopping based off of that list. For the past couple of months I’ve been sharing my grocery hauls (80% from Trader Joes and about 20% from Sprouts) on Instagram and people seem to find it very helpful. One of the main requests I get is to share the recipes for the meals I share. So I’m going to share my weekly meals with links to recipes, products used, and more in depth review of each meal here, in addition to continue sharing on the (insta) gram.
We’re slowly getting back into a routine since being gone and it feels great! I was talking to someone about doing these meal plans and they asked if these were getting old for me. Quite the opposite! I love that it’s forcing me to come up with different meals each week and think outside of the box. And! I hope they are helping you find inspiration in the kitchen as well
1 – Chicken Sausage and Fajitas | I plan on sautéing bell peppers and onions and serving that up along side our favorite jalapeño chicken sausage, sweet potato fries, and some fresh fruit.
2 – Chicken Verde Tacos! | I felt it needed the exclamation mark because of how easy these are to make! One of my favorite ways to use my crock pot. It’s literally 1 pound of chicken (I do chicken breasts) and 1 jar of salsa verde on high for 4 hours. Shred it up when you have 15-30 minutes left and then let it finish and marinate for the remaining time. I’ll serve these with cabbage tossed with green goddess dressing (from trader joes), avocado, and cheese!
3 – Pesto Flatbread | Another Trader Joes meal! I use their whole wheat pizza dough, top it with this pesto, roasted cherry tomatoes, white onion, and chicken sausage.
4 – Orange Chicken Bowls | Our favorite go to easy meal of the week. Trader Joes Orange chicken served with steamed carrots and broccoli, all over brown rice!

Before I get questions, I only sharing dinners because breakfast and lunch are less than exciting for us. I am lucky enough to get breakfast and lunch for free at work. Some mornings I will take overnight oats, or yogurt with granola and peanut butter for breakfast. Travis usually eats cereal or toaster waffles for breakfast. For Trav’s lunches, he will usually have left overs, or PB+J sandwich with fresh fruit/vegetables I keep cut up in the fridge. So that’s why I only share our dinners.
