Ok so we all have some kind of routine when it comes to grocery shopping right? I don’t like to say I “meal prep” because I more or less plan our meals for the week and then go shopping based off of that list. For the past couple of months I’ve been sharing my grocery hauls (80% from Trader Joes and about 20% from Sprouts) on Instagram and people seem to find it very helpful. One of the main requests I get is to share the recipes for the meals I share. So I’m going to share my weekly meals with links to recipes, products used, and more in depth review of each meal here, in addition to continue sharing on the (insta) gram.
I’m trying something new this week and sharing my grocery haul and weekly meal plan on IGTV! If you don’t see my channel on my instagram page make sure you have updated Instagram!
1 – Burrito Bowls | One of our oldies (but goodies). I pile on cilantro lime rice, black beans, corn (this is our fav!!), sautéed bell peppers, onions, and zucchini, all topped with cheese, avocado, salsa and non fat greek yogurt (as a sub for sour cream)
2 – Roasted Vegetable Salad| I’m going to roast off any random vegetables we have laying around (using this recipe!), and throw in chicken sausage, and hummus and serve it with greens and pita bread!
3 – Black Bean Tacos | One of our favorites (and vegetarian friendly!). I sauté sweet potatoes, yellow onion, black beans and kale and use it for the taco filling. We will top it all with green goddess dressing slaw, cheese, and avocado
4 – Spicy Chicken Bowls | I found this recipe from Pinch of Yum and am going to recreate it for an easy week night dinner. I’ll end up making a little extra for a couple lunches for Trav.
4 – Pomodoro Pasta | As a last minute addition, I added this pasta recipe I found on Pinterest. We’re obsessed with goat cheese + marinara sauce so this immediately caught our eyes. I’m going to serve it with a side salad and garlic bread for a fun Sunday night dinner!
So there you have it! Hope you have a great week!
Before I get questions, I only sharing dinners because breakfast and lunch are less than exciting for us. I am lucky enough to get breakfast and lunch for free at work. Some mornings I will take overnight oats, or yogurt with granola and peanut butter for breakfast. Travis usually eats cereal or toaster waffles for breakfast. For Trav’s lunches, he will usually have left overs, or PB+J sandwich with fresh fruit/vegetables I keep cut up in the fridge. So that’s why I only share our dinners.
If you do have any other questions, leave them below. I’m going to do a post in the coming weeks on all the questions I’ve been getting in response to my weekly meal plans.
You can see past meal plans HERE.
Make sure to follow along on Instagram where I walk through my weekly meal plan and show you my grocery haul on Instastories each Sunday!
