Berry Baked Oatmeal

Cook Time 45 minutes

Ingredients

  • 2 cups Oatmeal
  • 1 tsp Baking powder
  • 1 tsp Cinnamon
  • 1/2 tsp salt
  • 2 Large Eggs
  • 2 cups Milk of choice
  • 2 tsp vanilla
  • 1/3 cup Honey or Maple Syrup
  • 2 tbsp Chia seeds
  • 1 cup Fresh or Frozen Berries

Optional Toppings

  • 1/2 cup chopped nuts

Instructions

  1. Preheat oven to 375 degrees F

  2. Mix together oats, baking powder, salt, cinnamon together.

  3. Add in milk, egg, honey, vanilla, and mix well

  4. Add in chia seeds and berries and mix until just combined

  5. Add to 9x9 baking pan lined with parchment paper, or well oiled

  6. Top with optional nuts before baking

  7. Bake for 45-50 minutes. Allow to cool for 5 minutes and enjoy. Or save in the fridge for up to 5 days.
